Can someone explain why making the DB instance a multi AZ not a good option? This way if primary is deleted the standby becomes a standalone. Disabling "Delete automated backups" only ensures that the database can be restored. Any thoughts?

Because Multi-AZ will not protect CloudFormation from deleting the instance.
