The consultant should recommend 802.11ax, also known as Wi-Fi 6, which is the latest wireless standard that provides high speeds even in congested areas.

Yep I agree, also to add, 802.11ax supports both 2.4 and 5Ghz, which is important as you have no control over what devices are brought into the shop, older laptops and smartphones may not have support for 5Ghz and with 802.11ax that is not a problem.
