Disabling the user account can prevent the user from accessing company resources, but it does not erase the data stored on the lost phone.

Because they links to the AD users account not the phone and they wouldn't be able to carry out day to day work. e.g on a workstation. It also doesn't block people from seeing Cached emails on the phone.
