I think: 1 Always On (as Mirroring is depreciated and Always On is analog) 2 Always On 3 Always On

always on for standard edition is supported only for one secondary. see limitation https://docs.microsoft.com/en-us/sql/database-engine/availability-groups/windows/basic-availability-groups-always-on-availability-groups?view=sql-server-ver15

Log shipping is for disaster recovery. Database mirroring (per database) is a high-availability solution that is available for Standard SQL version. Use HA all the way though, if you have enterprise edition.
