There's no setting that limits to what a user (guest or otherwise) can VIEW in a meeting. Only what can be shared. The only way to limit what a guest can view is to limit the ability of everyone. It has to be set in a Metting Policy. Limit screen sharing to "single application". That will accomplish the requirement of allowing guests to VIEW only a single application.
