Once the VNets are peered, all resources on one VNet can communicate with resources on the other peered VNets. You plan to enable peering between Paris-
VNet and AllOffices-VNet. Therefore VMs on Subnet1, which is on Paris-VNet and VMs on Subnet3, which is on AllOffices-VNet will be able to connect to each other.
All Azure resources connected to a VNet have outbound connectivity to the Internet by default. Therefore VMs on ClientSubnet, which is on ClientResources-VNet will have access to the Internet; and VMs on Subnet3 and Subnet4, which are on AllOffices-VNet will have access to the Internet.

Subnet1-Subnet3 are able to communicate via VNet peering Communicate to the internet: All resources in a VNet can communicate outbound to the internet, by default. You can communicate inbound to a resource by assigning a public IP address or a public Load Balancer. You can also use Public IP addresses or public Load Balancer to manage your outbound connections So it is Y-Y-Y

No-Yes-Yes. "You will enable the Use remote gateways setting for the Paris-VNet peerings." But they didn't mention if you enabled Use as gateway for the second peering

But "remote gateway" setting is irrelevant for communication between hosts on the VNets itself. They are asking if Subnet1 and Subnet3 can communicate, not if Subnet1 can reach hosts BEHIND Subnet3.

There are only default routes, and by default, all VMs can reach the Internet. So 3rd answer is Yes.
