Changing the default domain would only affect new users. To affect existing users, you need to run the Set-Mailbox cmdlet.

For me Answer is NO. You have to modify "email address policy"

the default domain only apply to new user, so i think the answer is no for this question

Default domain applies only to NEW mailboxes (does not affected existing ones).

I added a domain to a Test-Tenant, made it default and all the existing Cloud-Users with mailboxes did not change their Email-Address or their UPN to the new default Domain. So its cleary NO. How every Exchange Online has no E-Mail Address Policies, so you would either need to script this or use the OnPrem Email-Address-Policies and AzureAD-Sync
