This is one of the requirements. "Salespeople must be trained on how to determine if inventory is available when they are completing the quote to avoid promising inventory that is not on hand because all orders are processed one week in advance of delivery." Then, the question ask you to create the process for salespeople...to meet the deliver on a specific customer date Answer: View the item availability by period IMHO

Yes, Change the requested delivery date must be correct as the customer requests specific delivery date and it must be captured in the system as such. It is totally other area how to manage the demands.
