Answer has to be Dual-write for both I think. Reason is that "No street team representatives will have access to the Dynamics 365 Supply Chain Management application". An OData call direct to D365 SCM will use the security access that the user has setup in D365. Instead the data needs to be stored in the Dataverse and D365 needs updated via Dual-write. This is applicable for product information queries as well as sales order creations.
