InstanceCount Default value is -1 which means that DnsService is running on every node. OneBox needs this to be set to 1 since DnsService uses well known port 53, so it cannot have multiple instances on the same machine.

Why should I set locally 5 Instances instead of 1 ?

Locally you'd run a single (1) instance of Service Fabric containing 5 node instances, so locally 5 seems correct.
