I believe it's B, as even if the other team members are working almost full capacity, it does not state that they are working on critical tasks, so their work/tasks should be reprioritized to fill the void on the critical ones.

In the circumstances described in the question, the team is currently working on a best effort and I don't believes that reprioritization or discussion will be able to fill the void for the employee on sick leave. In such cases, it seems necessary to discuss the matter with the project sponsor. It seems important to convey whether the current team members do really full capacity to prevent misunderstandings from the project sponsor. And then it seems that you can do the action descrived in option C.
